Recipe Swap - Crockpot Applesauce Cake

This recipe was Delish!  It's a great cake because you probably already have the ingredients in your panty  and it can be made in the crock pot!  I got if from this cookbook and couldn't find a link to it on the internet so here it is...

Old Fashioned Applesauce Cake with Walnuts in the Crock Pot


1 1/2 cups all purpose flour
1/2 cup firmly packed light brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon nutmeg
pinch of ground allspice
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup unsweetened applesauce
1/4 cup buttermilk
5 tablespoons unsalted butter, melted
1 large egg
1/2 cup chopped walnuts

Line the bottom of the slow cooker with a round of parchment paper.  Coat the paper and the sides of the cooker one third of the way up with butter flavor non stick cooking spray.   In a medium size bowl, whisk together flour, brown sugar, spices, baking soda, baking powder and salt.  In a small bowl combine the applesauce, butter milk, melted butter and egg, beating until smooth.  Add the applesauce mixture to the dry ingredients and beat until smooth and fluffy.  Stir in the walnuts.  Spread the batter evenly in the cooker.  Cover and cook on high until puffed and a cake tester inserted into the center comes out clean.  About 2 1/4 to 2 1/2 hours.  Turn the cooker off, remove the lid, and let stand for 30 minutes to cool.  To remove the cake, run a knife around the inside iedge of the cooker and lift it out with a large rubber spatula.  Cut into small wedges and serve warm or at room temperature.  A little vanilla ice cream, maybe a vanilla or rum sauce....would  finish it off perfectly.

I IS a yummy recipe! I threw this together and in the crockpot about 3 p.m. this afternoon. I was skeptical it I would be able to pop it out of the crockpot, but it came out without a hitch.

It worked fine here too, even without the walnuts (nut allergy). I made it in the evening so that we could have it for breakfast. Also I substituted milk plus vinegar for the buttermilk.

Oh, also I didn't have any butter-flavoured cooking spray: we use olive oil in a spritzer, and that worked fine.
